Tom,
While there will always be some variation usually only seen by a data logger, a constantly rising situation is not cool when using an electric pump and feeding a nitrous system.
While the easy answer is that it is time to check or change the regulator, there are a couple of things that need addressed.
When running your open flow test make sure the voltage is the same as race conditions.
Use a volt meter and tap the fuel pump and take some readings to see if things are enough different there to throw off your settings.
Ahhh, one last thought.
Your psi sensor should be after the regulator and before the fuel solenoid. Positioned anywhere else will lead to strange, useless numbers for nitrous tuning.
